A dainty and refreshing dessert is made as follows: Put a quart of rich cream in a large bowl; stir a pound of powdered sugar through it, flavor it very slightly with extract of vanilla, and with a cream whip beat to a stiff froth; put it in a freezer and freeze it for ice cream; when frozen put a layer of it in the bottom of a scalloped pyramid mould, smooth it and cover with a layer of fine large raspberries; repeat this process until the mould is filled; then cover it and pack it in chipped ice. Sprinkle rock salt over about every third layer of ice; pack tight, cover over with a piece of old carpet or flannel cloth and stand in a cool place; when ready to serve lift the mould from the ice; let it stand in a warm place for about five minutes, then take off the cover and turn the concoction into a glass dish; ornament the top with a panache of white and raspberry-colored whipped cream.
